Let's Get Ready to Guac

Hi all! Hope you had a nice, relaxing weekend. I spent mine getting through the tail end of recovery from my tonsillectomy - what a treat! Luckily it was warm and sunny so I was able to get back out there into civilization.

 

I try to spend a good chunk of time cooking and baking each weekend. It's something I looove doing and I like to think I'm pretty good at it too. The first signs of warm weather inspired me to make something nice and refreshing so I decided to whip up some pineapple mango guacamole. 

 

I will always pay extra for guac, but having my own on hand at home is even better. This recipe is super simple. I really don't even follow a recipe when I make fresh guacamole. It's all about your personal preference, but here's what I used: 

  • Avocado

  • Garlic 

  • Pineapple 

  • Mango 

  • Cilantro 

  • Fresh lime juice

  • Chili powder

 

I start by cutting the avocado into pieces and mashing them with a fork. From there, simply chop up up the remaining ingredients and mix them in. I personally don't believe in buying your fruit precut, but pineapple and mango are two of the hardest fruits to handle so no judgement if you splurge on precut fruits. Sprinkle some chili powder on top and there ya have it! 

 

This guacamole goes beyond tortilla chips. Spread it on a chicken breast pan seared with cumin and you've got yourself a delicious and nutritious dinner. This is a great and easy way to get those healthy avocado fats or use up the produce in your fridge. You won't be disappointed, I promise.
